Dairy-Free Cashew “Cheese” Dip

Looking for a healthy, easy alternative to traditional cheese spreads?

This Cashew “cheese” is amazingly simple and delicious.  Get creative by adding ingredients like chopped scallions, basil or any herb of choice. Skip the garlic or apple cider vinegar for a milder flavor. Enjoy it with raw veggies, as a sandwich or wrap spread, to fill stuffed mushrooms, etc!

Prep Time: 3 hours (to soak cashews)

Cook Time: 5 minutes

Yield: 16 servings

INGREDIENTS:

  1. 1 cup  cashews

  2. 1/2 – 3/4 cup water (add more water according to consistency desired

  3. Juice of 1/2 lemon

  4. 1/2 tsp. sea salt

  5. 1/2 tsp apple cider vinegar

  6. 1 garlic clove, chopped

  7. 1 tbsp olive oil

DIRECTIONS:

  1. Soak the cashews in filtered water for 3 hrs or more then strain.

  2. Add the cashews and fresh filtered water to the blender or food processor and blend until smooth.

  3. Add remaining ingredients depending on whether you were making a sweet or savory cream, then blend until smooth.
