chickpea salad

change up your salad with chickpeas! chickpeas are perfect for a delicious, easy and light summer lunch, so i try to always have them on hand. chickpeas are high in protein, fiber, folate, vitamin b6, b1, magnesium, iron, calcium and manganese.


  1. 1, 15 oz can garbanzo beans

  2. 1 red bell pepper, chopped

  3. 1 cup fresh parsley, chopped

  4. 1, small red onion

  5. 2, celery ribs, chopped

  6. 2 Tbsp olive oil

  7. 3 Tbsp lemon juice

  8. 1 garlic clove


  1. Finely chop garlic clove and mix with olive oil, lemon juice, salt, and pepper

  2. Wash and chop bell pepper, parsley, onion, and celery

  3. In a large bowl, add the chickpeas, bell pepper, parsley, red onion, and celery. Add the dressing to the chickpea mixture and toss to coat. Serve immediately or chill up to 4 days. Before serving, add more salt and pepper to taste.
