Banana Apple Blueberry Muffins

I love making healthy muffins for breakfast!  These whole grain muffins are full of plant-based energizing nutrients like iron, antioxidants and fiber.  Whole grains, fresh fruit and nuts help keep you satisfied and ready to take on your day.

Ingredients:

  1. 3 ripe bananas

  2. 1 apple, diced

  3. 1 cup chopped nuts/dried fruit

  4. 1 ¾ c whole wheat flour

  5. ½ c old-fashioned oats

  6. 1 c apple sauce

  7. ½ c water

  8. 1 c frozen blueberries

  9. 1 ½ tbsp flax seed

  10. ½ tsp baking soda

  11. 1 ½ tsp baking powder

  12. 1 tbs olive oil

  13. 1 tsp vanilla extract

Dash of salt, cinnamon, nutmeg

 Directions:

Mix all ingredients together in a bowl.

Bake at 350 for 20 min.

Makes about 20 muffins
